Ukrainian Salted Pork Fat with Garlic
Description
A traditional Ukrainian delicacy made of cured pork fat (salo), rubbed with garlic and spices. Served cold, thinly sliced, often with rye bread, onions, or pickles. Popular across all regions of Ukraine as a symbol of national cuisine.

Prepare the salo. Rinse the pork fat under cold water, pat dry with a paper towel, and cut into medium pieces (about 10x5 cm).

Make the garlic paste. Crush or finely chop the garlic, then mix with salt, black pepper, and paprika (if using).

Rub the salo. Rub each piece of salo generously with the garlic-spice mixture. Insert small pieces of bay leaf around.

Pack into container. Place the seasoned salo into a container with a lid, pressing slightly to remove air gaps.

Cure the salo. Store in the refrigerator (or a cool dark place) for 2–5 days, depending on how salty and aromatic you prefer.

Serve. Slice thinly and serve cold with rye bread, onions, or pickles.
