Garlic Pampushky
Description
Soft Ukrainian yeast bread rolls, baked until golden and brushed with fragrant garlic oil. Traditionally served with borscht but can also accompany other soups and main dishes. Originating from central Ukraine, pampushky are a beloved comfort food.

Activate the yeast. Mix warm water, sugar, and yeast. Let stand 10 minutes until foamy.

Make the dough. Add flour, salt, and oil. Knead until smooth (8–10 min). Cover and let rise for 1 hour.

Shape the rolls. Divide the dough into 12 equal pieces. Shape into balls and place on a greased baking tray.

Second rise. Cover and let rest for 15–20 minutes. The pampushky should rise slightly.

Bake. Bake at 180°C (350°F) for 20–25 minutes until golden brown.

Garlic topping. Mix minced garlic, oil, and dill. Brush the hot pampushky generously.

Serve. Serve warm, traditionally with borscht.
