Ukrainian Dumplings with Potato Filling
Description
Ukrainian dumplings, known as varenyky, are soft boiled dough pockets filled with creamy mashed potatoes and onions. A classic comfort food, they are often topped with fried onions and served with sour cream. Widely popular across Ukraine, especially as a hearty family dish.

Prepare the dough. Mix flour with salt. Add water, egg, and oil. Knead into a smooth, elastic dough. Cover and rest for 20 minutes.

Make the filling. Boil peeled potatoes until soft. Mash with salt and pepper. Sauté onions in oil/butter until golden and mix into potatoes.

Roll and cut. Roll out dough to 2 mm thickness. Cut circles (6–7 cm) with a glass or cutter.

Fill and seal. Place 1 tsp of filling in the center of each circle. Fold in half and pinch edges tightly.

Cook varenyky. Bring salted water to a boil. Drop dumplings in batches. Cook until they float + 2–3 min. Remove with a slotted spoon.

Serve. Top with fried onions and serve hot with sour cream.
