Ukrainian Dumplings with Cheese
Description
Traditional Ukrainian dumplings (varenyky) filled with fresh cottage cheese, slightly sweet or savory depending on the recipe. Served with sour cream or melted butter, they are a beloved comfort food across Ukraine, especially in central and western regions.

Prepare the dough. Mix flour, egg, water, and salt. Knead until smooth and elastic, let rest 20 minutes.

Make the filling. Combine cottage cheese with egg yolk and sugar (for sweet) or salt (for savory). Mix well.

Form the dumplings. Roll out dough thinly, cut circles, place filling in center, fold and pinch edges tightly.

Boil. Drop dumplings into salted boiling water, cook 5–7 minutes until they float.

Serve. Drain, serve hot with sour cream or melted butter.
