A rustic open-faced pie made with buttery pastry and filled with seasonal berries such as strawberries, raspberries, blueberries, or cherries. Crispy on the outside and juicy inside, this galette is a simple yet elegant dessert popular in many regions of Ukraine during summer.
Prepare the dough. Mix flour, sugar, and salt. Cut butter into cubes and rub into flour until crumbly. Add water and knead into dough. Wrap in film, refrigerate 30 min.
Prepare the filling. Mix berries with sugar, cornstarch, and lemon juice.
Roll out the dough. Roll dough into a circle on parchment.
Assemble the galette. Place filling in center, leaving edges free. Fold edges over berries.
Brush and sprinkle. Brush edges with beaten egg, sprinkle sugar.
Bake. Bake at 190°C for 35–40 min until golden brown.
Serve. Cool slightly, serve warm or chilled with tea or ice cream.
