A rich, hearty Ukrainian borscht made with tender pork ribs, vibrant beets, and aromatic vegetables. A deeply flavorful soup perfect for family lunches and cozy evenings.
Prepare the broth. Place pork ribs into a pot, add water, onion, carrot, bay leaf, and salt. Simmer 60–70 minutes.
Remove ribs and strain the broth. Take the ribs out, cut into portions; strain the broth for clarity.
Cook potatoes and cabbage. Add diced potatoes and shredded cabbage to the broth; cook 10–12 minutes.
Prepare beet sauté. Sauté grated beets with oil, vinegar, sugar, and tomato paste for 7–10 minutes.
Prepare vegetable sauté. Sauté chopped onion and grated carrot until golden.
Combine everything. Return ribs to the pot, add beet sauté and onion-carrot sauté. Simmer 15 minutes.
Season and finish. Add salt, pepper, dill, and garlic to taste. Let borscht rest 20 minutes before serving.
