Instructions

  1. Prepare the dough. Mix flour, sugar, baking powder, and salt. Add cold butter and rub until crumbs form. Add the egg and knead into a smooth dough.

  1. Chill the dough. Wrap in plastic and refrigerate for 20–30 minutes.

  1. Prepare the filling. In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Heat until thickened, then let cool.

  1. Assemble the pie. Roll out 2/3 of the dough and line a baking dish. Pour in the cherry filling. Cover with the remaining dough (lattice or full layer).

  1. Bake. Bake at 180°C (350°F) for 40–45 minutes until golden brown.

  1. Cool and serve. Let the pie cool slightly, then cut into slices. Serve with tea or ice cream.
