A fragrant homemade cherry pie with a buttery crust and juicy filling — a beloved classic of Eastern European baking, especially popular in central and northern Ukraine during cherry season.
Prepare the dough. Mix flour, sugar, baking powder, and salt. Add cold butter and rub until crumbs form. Add the egg and knead into a smooth dough.
Chill the dough. Wrap in plastic and refrigerate for 20–30 minutes.
Prepare the filling. In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Heat until thickened, then let cool.
Assemble the pie. Roll out 2/3 of the dough and line a baking dish. Pour in the cherry filling. Cover with the remaining dough (lattice or full layer).
Bake. Bake at 180°C (350°F) for 40–45 minutes until golden brown.
Cool and serve. Let the pie cool slightly, then cut into slices. Serve with tea or ice cream.
