A comforting Ukrainian soup made with chicken broth, vegetables, and tender homemade noodles. A traditional dish often cooked in rural households, it combines warmth, nourishment, and family heritage.
Prepare the broth. Place chicken in a pot, add 3 L water, carrot, onion, parsley root, bay leaves, peppercorns. Bring to a boil, remove foam, simmer 50–60 min.
Make the noodles. Beat egg with salt, gradually add flour. Knead stiff dough, roll very thin, let dry 10–15 min. Cut into thin strips.
Strain the broth. Remove chicken and vegetables. Strain broth through a sieve. Return chicken meat (cut into pieces) into pot.
Cook the noodles. Add noodles to boiling broth. Cook 3–5 min until tender.
Serve. Pour into bowls, garnish with chopped dill or parsley. Serve hot.
