Deruny are traditional Ukrainian potato pancakes made from grated potatoes, onions, eggs, and flour, pan-fried until golden brown. Crispy on the outside and tender inside, they are usually served with sour cream. Popular across Ukraine, especially in Polissia and northern regions.
Grate potatoes and onion. Peel potatoes and onion, grate finely.
Remove excess liquid. Squeeze out excess liquid with your hands or cheesecloth.
Mix batter. Add egg, flour, salt, and pepper. Mix until smooth.
Heat oil. Heat frying pan with oil over medium heat.
Fry deruny. Spoon potato mixture onto pan, flatten slightly. Fry 3–4 min per side until golden brown.
Serve. Place deruny on plate, serve hot with sour cream.
