A layered festive salad made with salted herring, potatoes, carrots, beets, onions, and mayonnaise. Known as “Shuba,” this colorful dish is a staple at Ukrainian and other Slavic holiday tables.
Boil vegetables. Boil potatoes, carrots, and beets until tender. Cool and peel.
Prepare the fish. Cut salted herring fillets into small cubes.
Chop the onion. Finely chop the onion and, if desired, soak in cold water for 5 minutes to reduce sharpness.
Grate vegetables. Grate potatoes, carrots, and beets separately.
Layer the salad. On a serving dish, layer ingredients in the following order:
Herring
Onion
Potatoes + mayonnaise
Carrots + mayonnaise
Beets + mayonnaise
Optional garnish. Top with grated eggs for decoration.
Chill before serving. Refrigerate for at least 2 hours before serving.
