A classic Ukrainian appetizer of salted herring fillets layered with onions and drizzled with sunflower oil. Traditionally served with black rye bread, potatoes, or as part of festive meals. Widely popular in northern and central regions of Ukraine.
Prepare the herring. Rinse fillets lightly if too salty, pat dry, cut into bite-sized pieces.
Slice the onion. Peel and slice onions into thin rings or half-rings.
Layer herring and onion. In a container, arrange herring pieces in a layer, cover with onion slices, repeat until ingredients are used.
Season and add oil. Sprinkle with black pepper, add bay leaves if desired, drizzle with sunflower oil.
Marinate. Cover and refrigerate for at least 1 hour before serving.
Serve. Garnish with parsley, serve with rye bread and boiled potatoes.
