Light, hearty and perfect for the whole family, this traditional Ukrainian-style meatball soup is made with vegetables, tender minced meatballs, and flavorful broth. Simple, nutritious and comforting.
Prepare vegetables. Peel and dice potatoes. Grate carrot, finely chop onion.
Make the meatballs. Mix minced meat with egg, onion, semolina, salt, and pepper. Form small balls.
Start the soup. Bring water to boil, add potatoes and cook 10 minutes.
Sauté vegetables. Fry onion and carrot in oil until soft, add to soup.
Add meatballs. Gently drop meatballs into the pot. Cook 10 minutes.
Finish cooking. Add vermicelli, season with salt and pepper. Cook 5 more minutes.
Serve. Sprinkle with herbs and serve hot.
