Millet Porridge with Pumpkin
Description
A traditional Ukrainian sweet porridge made with millet and pumpkin, cooked in milk or water, and lightly sweetened with sugar or honey. It’s creamy, fragrant, and often served for breakfast or as a light dinner. Popular in rural Ukrainian cuisine, especially in autumn.

Prepare the millet. Rinse millet in hot water several times to remove bitterness.

Cook the pumpkin. Place pumpkin cubes in a pot with 200 ml water, simmer for 10–15 minutes until soft.

Add millet and milk. Add rinsed millet and pour in milk. Bring to a boil, then reduce heat to low.

Simmer until tender. Cook for 25 minutes, stirring occasionally, until millet is soft and porridge is thick.

Finish with butter and sugar . Stir in butter and sugar (or honey). Mix well.

Serve. Serve warm with extra butter, honey, or milk if desired.
