Mushroom Roast
Description
A rich, hearty dish combining tender potatoes, onions, and mushrooms baked in a creamy sauce. Traditionally served during family dinners or holidays in Western Ukraine.

Prepare the ingredients. Peel potatoes and cut into large cubes. Slice mushrooms, onion, and carrot.

Sauté vegetables. Heat oil and butter in a frying pan. Add onion and carrot, sauté until soft.

Add mushrooms. Add sliced mushrooms and fry until they release liquid and start to brown.

Add potatoes and season. Add potatoes, mix with mushrooms, season with salt and pepper.

Bake. Transfer everything into a baking dish, top with sour cream, cover with foil, and bake at 180°C for 30–35 min.

Serve. Garnish with chopped herbs and serve hot.
