Roast Duck with Apples
Description
A festive Ukrainian dish often prepared for holidays and family gatherings. The duck is roasted whole with apples, which balance the rich meat with sweetness and aroma. This dish has deep roots in Slavic cuisine and remains a centerpiece for special occasions.

Prepare the duck. Clean and rinse duck, pat dry. Rub inside and outside with salt, pepper, garlic, thyme, and paprika.

Prepare the apples. Wash apples, cut into quarters, remove cores.

Stuff the duck. Place apples inside the duck. Sew or tie cavity with kitchen twine.

Roast. Place duck on a roasting pan breast side up. Brush with oil or butter. Roast at 180°C for 90–120 min, basting with juices every 30 min.

Check doneness. Meat should be tender, skin golden. Internal temp: 75°C.

Serve. Let rest 10 min before carving. Garnish with fresh herbs and serve with baked apples.
