Shopska Salad is a refreshing vegetable salad made with tomatoes, cucumbers, peppers, onions, and grated white cheese (sirene). Originating from Bulgaria, it became popular across Eastern Europe, including Ukraine, as a light and healthy dish often served with grilled meats or as a summer starter.
Prepare vegetables. Wash tomatoes, cucumbers, and pepper. Dice into medium cubes.
Chop onion. Slice onion thinly. If desired, soak briefly in cold water to remove bitterness.
Combine salad. Place all vegetables in a bowl. Season with salt, pepper, oil, and vinegar (or lemon juice). Toss lightly.
Add cheese. Grate or crumble white cheese on top.
Garnish and serve. Sprinkle with fresh parsley. Serve immediately as a light main or side dish.
