Sweet Ukrainian dumplings (varenyky) filled with fresh or frozen cherries. A popular summer dish, often served with sour cream or sweetened cream. Especially beloved in central and western Ukraine, these dumplings combine soft dough with juicy, slightly tart filling.
Prepare the dough. Mix flour, egg, water, and salt. Knead until smooth and elastic, let rest 20 minutes.
Make the filling. Mix cherries with sugar (and starch if desired).
Form the dumplings. Roll out dough thinly, cut circles, place cherries in center, fold and pinch edges tightly.
Boil. Drop dumplings into salted boiling water, cook 5–7 minutes until they float.
Serve. Drain, serve hot with sour cream or sweet cream.
