Traditional Ukrainian honey mead — a naturally fermented drink made from honey, water, and spices. Lightly sweet, aromatic, and full of heritage flavor.
Prepare honey mixture. Warm water (not boiling) and dissolve honey completely.
Add spices. Add cloves, cinnamon, peppercorns, and optional lemon peel.
Cool down. Let the mixture cool to about 30°C.
Add yeast. Add yeast or a small piece of rye bread to start fermentation.
Fermentation. Cover the container with gauze and leave in a warm place for 3–5 days. Stir once a day.
Strain and store. Strain the mead, pour into bottles, and refrigerate for another 2 days before serving.
