Zharke (Ukrainian pot roast) is a traditional hearty dish made of meat, potatoes, onions, and carrots, baked slowly in clay pots. The slow cooking makes the ingredients tender, juicy, and full of rich flavor — a true taste of Ukrainian countryside comfort food.
Prepare meat. Heat oil in a pan and fry meat until golden brown on all sides.
Add vegetables. Add chopped onion and carrot to the pan, sauté for 5–7 minutes.
Assemble in pots. Place a layer of potatoes, then meat and vegetables, alternating layers.
Season and add broth. Add salt, pepper, garlic, bay leaf, and pour in broth to cover ingredients.
Bake. Cover with lids and bake in preheated oven at 180°C (356°F) for 1–1.2 hours.
Serve. Serve hot directly in the clay pots, sprinkled with fresh parsley.
