Uzvar is a traditional Ukrainian drink made from dried fruits such as apples, pears, prunes, and raisins. Sweetened with honey and infused with natural flavors, it is usually served cold during Christmas and festive occasions. Originates from all regions of Ukraine, symbolizing health and abundance.
Rinse dried fruits. Wash apples, pears, prunes, and raisins under cold water.
Boil the water. Pour 3 liters of water into a large pot and bring to a boil.
Cook fruits. Add dried apples and pears first, simmer for 20 minutes.
Add other fruits. Add prunes and raisins, simmer another 15–20 minutes.
Sweeten. Remove from heat, add honey (or sugar) while warm, stir well.
Cool and infuse. Let the uzvar cool and infuse for several hours or overnight for best flavor.
Serve. Serve chilled, traditionally in clay mugs or glasses.
